Barry made our reservation for two nights on the Rincon Parkway months ago. We’ve had a nice, leisure trip down the coast, but this stop was allowing us to be right at the beach and hear the waves all day and night. We both love the water. Luckily, a couple days ago he saw that another site opened up that would allow us to stay for a total of 4 nights! (Aug 28, 29, 30 and 31) We jumped on it!
This was my FIRST experience truly parallel parking our 36 1/2 ft motorhome between two vehicles! It was a tight fit, but Barry was awesome at directing me in in one shot. A ranger who was coming by stopped and watched. Her response was, “Wow! You guys look like professionals.!” We had JUST enough room in front for the Jeep. It was my turn to direct Barry in with the Jeep.
Our dash cam and side-view camera captured it all- including additional distractions of road traffic (both directions) along with multiple cyclists, and a pedestrian or two.
How awesome it was to open the door of the motorhome and see the ocean right there so close. This was home for two nights. I liked how parking our Jeep in front of Vinny, and the car for the site in front of us was parked behind their RV. That allowed us better views out our large front window!
We set up the Blackstone Griddle facing the ocean. What a great place to fix all our meals! Today I made grilled cheese on rosemary sourdough bread. OMG–SO good!
That evening was our first try at roasting fresh oysters on the griddle. I used some chopped spinach, pesto and grated cheese on the oysters, and fixed green beans also on the griddle. We loved how everything turned out, but I think the oysters will be better tomorrow. We topped dinner off with great rosemary sourdough bread (from Whole Foods) with our new infused olive oil with pineapple white balsamic vinegar that we got in Monterey. (We are addicted.)
I baked yet another blackberry cobbler that will get us through our stay here. Another addiction!
Day 2 began with bacon and scrambled eggs out on the griddle and eating beachside. It’s a rough life!
Our neighbor left today! I’m so glad Barry thought to take this picture before the next reservation showed up.
We went exploring on our bikes. It was a little windy, but the sun was breaking through the marine layer.
Yes, that’s me just chillin’ on a big, flat rock using one of our beach leg-less chairs. It was a great place to chat uninterrupted with Abby on the phone.
We took a walk on the beach. When we got near our site, we took different paths up the boulders to Vinny.
MORE Grilled oysters – Night 2. I decided to create some steam to help the oyster open more timely. Using my squirt water bottle, I squirted water on the griddle/oysters and quickly covered them. 3 minutes later they were opening. Some took a little longer, but it worked much better than just dry heat!
Then I put a blend I made of unsalted butter, chopped spinach, pesto, and grated Parmesan on each one. When looking good, I sprinkled a little more grated cheese on top, and voila! OMG. Mouth watering good! This was the ticket!
Aug 30 – Time to move sites! Ready to start our next reservation – 2 nights in Site #108. Simply moving from one site to another meant we were able to move as soon as the rig in 108 left. We totally lucked out. Not only did the guy in 108 leave early this morning, but the next two sites, # 109 and #110 were also vacant! That facilitated easy-peasy parking! After I backed Vinny in with Barry’s guidance, I glanced down at the rear view camera. Oh my! It was quite startling! I’m not sure why a class A motorhome would put their tow vehicle behind them instead of in front. I wouldn’t want to feel like we’re about to hit or be hit by the RV that is that close to my front window. As you can see though we are both within the white boundary line of our sites.
Site 108 had fewer big boulders, and those present were lower which allowed for a completely unobstructed water view while sitting out on our “patio”.
Grilled smoked cheese + turkey on sourdough for lunch!
AND of course OYSTERS again for dinner along with using some of the fresh cod ceviche, and yummy rosemary sour dough bread with olive oil/balsamic vinegar.
DOLPHINS! We got to see dolphins in the afternoon and then after dinner coming back from the opposite direction! It reminded me when I was camped on the beach at Camp Pendleton for a few days with my parents the summer between my junior and senior year of high school. We would watch a pod of dolphins swim by us one direction, and then a few hours later they’d come back from the opposite. That made me think we might see these dolphins do the same, and they did! We were lucky enough to watch them from this site both days! This was definitely special beach time for me. I truly enjoyed just chillin’ these four days on the Rincon Parkway!
The way these dolphins stayed in this one section I wondered if they were feeding on unfortunate fish.

I didn’t want to miss seeing any dolphins while prepping for dinner. So I moved my prep table front and center facing he water! We did see them again, but the water was a little rougher and the dolphins stayed below the surface more on this part of their journey.
Tomorrow we leave for a month in Chula Vista. We are looking forward to spending a lot of time with our grandkids, and to play some great pickleball!
